Agar isn’t broken down by microbial enzymes apart from a few species (including bacteria living in marine and freshwater habitats), and it dissolves well in boiling water, making it easy to sterilize. It's worth noting that these benchmarks compare a pure TypeScript/JavaScript implementation of the new API against the native (JavaScript/C++/Rust) implementations of Web streams in each runtime.
